Tangy Watermelon Rice Krispies Treats + $100 Visa Card Giveaway

New season brings a new challenge from Rice Krispies Making Memories Challenge and The Motherhood.

As part of Team Kansas City we were challenged to create an original recipe that is suitable for summertime fun – and what better way to have fun than with a summer picnic.

Team Kansas City (Kristin from Dine & Dish, Jenn from Super Jenn, Julie from My Kansas City Mommy & I) are not only amazing bloggers, but also my friends. So when we get together, we end up laughing as much as we are cooking. (Because Jenn usually has a really good story.)

So our picnic creation included our original Tangy Watermelon Rice Krispies Treats, super-dooper-cute Rice Krispies Treat Burgers and then some cute ants who wanted in on the action.

If you love Laffy Taffy – you have to make this recipe. It is unlike any Rice Krispies Treat you have ever had.

Tangy Watermelon Rice Krispies Treats Recipe

INGREDIENTS

  • 1 bag marshmallows
  • 1 bag strawberry flavored marshmallows
  • ½ cup butter, plus extra for greasing
  • 8 cups of Kellogg’s Rice Krispies
  • 1 packet watermelon-cherry drink mix
  • 1 packet lime drink mix
  • Raisins or chocolate chips for garnish

For the Green Layer

  1. Grease one 9” round cake pan and set aside.
  2. Place four cups of Kellogg’s Rice Krispies in a large bowl.
  3. Melt ¼ cup of butter in a large sauce pan over low heat. Add regular marshmallows and stir till melted and well blended. Cook two minutes longer. Stir in lime drink mix and stir till well blended.
  4. Pour marshmallow mixture over Rice Krispies and stir till well coated.
  5. Using a butter spatula, press mixture around the outer rim of cake pan to desired to width (about one to two inches.)

For the Watermelon Layer

  1. Place four cups of Kellogg’s Rice Krispies in a large bowl.
  2. Melt ¼ cup of butter in a large sauce pan over low heat. Add strawberry marshmallows and stir till melted and well blended. And then cook two minutes longer. Stir in watermelon-cherry drink mix and stir till well blended.
  3. Pour marshmallow mixture over Rice Krispies and stir till well coated.
  4. Using a butter spatula, press mixture into the remaining area of cake pan.
  5. One cool, add raisins or chocolate chips for garnish.
